Mango season is my favorite! With so many ripe, juicy mangoes around, I couldn't resist making these delightful eggless muffins. They're a healthy and sweet treat, perfect for sharing with friends (or enjoying all by yourself!).These muffins use a simple mix of whole wheat flour, bran, and all-purpose flour for a wholesome texture. The homemade mango pulp adds a burst of fresh flavor, and a touch of stevia or brown sugar balances the sweetness.Each muffin is surprisingly low in calories – around 160 – making them a guilt-free indulgence. Ingredients
Dry Ingredients
- 1 cup Flour equal parts whole wheat flour, and all-purpose flour (maida), mixed, wheat bran
- 1 tsp Baking Powder
- 1/4 tsp Salt
Wet Ingredients
- 1/2 cup Mango Pulp homemade, approximately 5-7 tablespoons
- 6 tbsp Olive Oil
- 1/2 cup Milk low-fat milk
- 3-4 tbsp Stevia Or Sugar adjust to your preference and the sweetness of the mangoes, brown
- 1/4 tsp Vanilla Extract
Garnish
- 1/2 cup Mango chopped, for filling and garnishing
- 2-3 tbsp Mango Pulp for extra garnish
Instructions
Preheat oven to 350°F (175°C).
Prepare the Mango Mixture
- In a large bowl, combine the mango pulp, sweetener (stevia or brown sugar), and milk. Whisk until well combined.
Add Wet Ingredients
- Pour in the olive oil and vanilla extract. Whisk until thoroughly incorporated.
Combine Dry and Wet Ingredients
- In a separate bowl, whisk together the mixed flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
Fill the Muffin Tins
- Line a muffin tin with paper liners. Fill each liner about 2/3 full with the batter. Sprinkle with chopped mango pieces.
Bake the Muffins
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Garnish
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, fill the center of each muffin with additional mango chunks and a spoonful of mango puree.
