Instructions

Prepare the Sweet Corn Milk

  • Grind the sweet corn kernels with 1/2 cup of water in a blender until smooth. Strain the mixture through a fine-mesh sieve or cheesecloth to separate the milk from the pulp.

Cook the Corn Milk

  • Pour the corn milk into a saucepan and bring to a simmer over medium heat. Cook for 5-7 minutes, or until the raw corn smell disappears. Stir occasionally.

Prepare the Rice Flour Slurry

  • In a separate bowl, whisk together the rice flour and 1/4 cup of water until a smooth, lump-free slurry forms.

Combine and Cook the Custard

  • Gradually whisk the rice flour slurry into the simmering corn milk. Add the sugar and continue to whisk constantly. Cook for 3-4 minutes, or until the custard thickens slightly. Reduce heat to low and stir frequently to prevent sticking.

Cool and Serve

  • Remove the custard from the heat and let it cool completely to room temperature. Stir occasionally to prevent a skin from forming.

Add Fruit and Chill

  • Once cooled, gently fold in your chosen fruits. Refrigerate for at least 1 hour to allow the flavors to meld and the custard to chill thoroughly. Serve chilled and enjoy!

Recipe Notes

Expert Tips

  • For a richer flavor, use fresh, ripe sweet corn. If using frozen corn, thaw it completely before blending.
  • Adjust the amount of sugar to your preference. You can also use alternative sweeteners like maple syrup or honey.
  • Experiment with different fruits! Peaches, berries, and mangoes all work wonderfully in this recipe.
  • For a smoother custard, strain the corn milk through a fine-mesh sieve a second time before adding the rice flour slurry.
