Ingredients
For the Custard
- 2 cup Corn Kernels sweet
- 1/2 cup Water for blending
- 4 tsp Rice Flour
- 1/4 cup Water for mixing with rice flour
- 2 tbsp Sugar powdered or granulated
For the Fruit Topping
- 1 cup Fruits mixed, or chopped mango. choose your favorites!, sliced bananas, such as berries
Instructions
Prepare the Sweet Corn Milk
- Grind the sweet corn kernels with 1/2 cup of water in a blender until smooth. Strain the mixture through a fine-mesh sieve or cheesecloth to separate the milk from the pulp.
Cook the Corn Milk
- Pour the corn milk into a saucepan and bring to a simmer over medium heat. Cook for 5-7 minutes, or until the raw corn smell disappears. Stir occasionally.
Prepare the Rice Flour Slurry
- In a separate bowl, whisk together the rice flour and 1/4 cup of water until a smooth, lump-free slurry forms.
Combine and Cook the Custard
- Gradually whisk the rice flour slurry into the simmering corn milk. Add the sugar and continue to whisk constantly. Cook for 3-4 minutes, or until the custard thickens slightly. Reduce heat to low and stir frequently to prevent sticking.
Cool and Serve
- Remove the custard from the heat and let it cool completely to room temperature. Stir occasionally to prevent a skin from forming.
Add Fruit and Chill
- Once cooled, gently fold in your chosen fruits. Refrigerate for at least 1 hour to allow the flavors to meld and the custard to chill thoroughly. Serve chilled and enjoy!
