Ingredients
 

Vegetables

  • 300 gm Spinach washed and roughly chopped; stems can be included
  • 1 Potato medium-sized, peeled and finely chopped
  • 1 Onion chopped, medium-sized
  • 1 clove Garlic crushed

Optional Garnish (Croutons)

  • 2 slices Bread or similar; crusts removed, sprouted grain bread
  • 1 tsp Olive Oil for toasting croutons

Instructions
 

Prepare Croutons

  • Cut bread into small cubes. Toss with 1 tsp olive oil and roast in a pan until golden brown and crispy.

Sauté Aromatics

  • Heat 1 tbsp olive oil in a heavy-bottomed pan over medium heat. Add peppercorns and lightly toast for 1 minute. Add crushed garlic and chopped onion, cooking until onions soften and turn golden brown.

Cook Vegetables

  • Add chopped spinach and potatoes to the pan. Stir until lightly roasted. Pour in 180ml of water, and simmer for 20 minutes, or until potatoes are tender. Add more water if needed.

Blend the Soup

  • Allow the soup to cool slightly. Blend until smooth and creamy using an immersion blender or regular blender. Add more water to adjust consistency as needed.

Finish and Serve

  • Stir in cooked macaroni and season with salt to taste. Ladle into bowls, garnish with chilli flakes and croutons, and serve warm.
