  • 75 gm Butter cold, cubed, salted
  • 2 tbsp Cream cream, thickened cream; can substitute with heavy cream
  • 1 tsp Milk as needed to bring dough together
  • 1/2 tsp Salt for the kadai

Prepare the Dough

  • Sift together the flour, powdered sugar, and baking powder in a large bowl. Add the cold, cubed butter and rub it into the flour mixture using your fingertips until it resembles coarse crumbs. Stir in the nigella seeds. Gradually add the malai, mixing until a soft dough forms. Add a teaspoon of milk if needed to bring the dough together.

Preheat & Prepare Baking Surface

  • Place 2 cups of salt in a heavy-bottomed kadai (wok) and place a heatproof stand inside. Heat the kadai over high heat to preheat. Lightly grease a plate or baking sheet.

Shape & Bake the Biscuits

  • Roll the dough into small balls. Flatten each ball slightly to create a biscuit shape or make any shape you prefer. Place the biscuits on the prepared plate. Once the kadai is hot, carefully place the plate with biscuits inside the preheated kadai, ensuring the plate rests firmly on the stand above the salt. Cover the kadai and bake for 15-20 minutes, or until the biscuits are golden brown and cooked through. Check after 15 minutes; reduce the heat if needed.

Cool & Store

  • Remove the biscuits from the kadai and let them cool completely on a wire rack before storing them in an airtight container.
