  • If using all-purpose flour, proceed to the next step. If using ready-made flatbreads, skip ahead to step 3.

Make the Filling

  • In a large bowl, combine the cooked and grated sweet potatoes, French beans, green peas, carrots, and coriander leaves.
  • Add the garam masala, roasted cumin powder, red chili powder, amchur, salt, and cornstarch.
  • Mix all ingredients until well combined.

Assemble and Fry the Triangles

  • If using all-purpose flour, follow instructions below. If using ready made flatbreads, skip this step.
  • Take the flour and roll it into a thin circle (similar to a roti). Cut it into triangles using a knife or pizza cutter.
  • Spoon a portion of the sweet potato mixture onto the center of each triangle. Fold the edges of the triangles, forming a sort of small packet.
  • Heat the vegetable oil in a deep pan or wok over medium-high heat.
