Ingredients
For the Filling:
- 2 large Potatoes and grated, cooked, peeled, sweet
- 1 cup French Beans finely chopped
- 1/2 cup Peas fresh or frozen, green, thawed
- 1/2 cup Carrots finely chopped and steamed
- 1/4 cup Coriander finely chopped
- 1 tsp Garam Masala
- 1 tsp Cumin Seeds roasted and ground
- 1/2 tsp Chili Powder red
- 1 tsp Dry Mango Powder dry mango powder
- 1.5 tsp Salt or to taste
- 1 tsp Corn Flour for binding
For the Pastry:
- 1 cup All-Purpose Flour or use ready-made flatbreads, such as papadums
For Frying:
- Vegetable Oil for deep frying
Instructions
Prepare the Pastry
- If using all-purpose flour, proceed to the next step. If using ready-made flatbreads, skip ahead to step 3.
Make the Filling
- In a large bowl, combine the cooked and grated sweet potatoes, French beans, green peas, carrots, and coriander leaves.
- Add the garam masala, roasted cumin powder, red chili powder, amchur, salt, and cornstarch.
- Mix all ingredients until well combined.
Assemble and Fry the Triangles
- If using all-purpose flour, follow instructions below. If using ready made flatbreads, skip this step.
- Take the flour and roll it into a thin circle (similar to a roti). Cut it into triangles using a knife or pizza cutter.
- Spoon a portion of the sweet potato mixture onto the center of each triangle. Fold the edges of the triangles, forming a sort of small packet.
- Heat the vegetable oil in a deep pan or wok over medium-high heat.
- Fry the triangles in batches until golden brown and crispy.
- Remove the fried triangles and place them on paper towels to drain any excess oil.
- Serve hot with your favorite dipping sauce, such as red chili sauce or tamarind chutney.
