  • Soak the tapioca pearls in just enough water to cover them. Allow them to soak until they become soft and translucent.

  • While the tapioca pearls are soaking, boil the potatoes until tender. Drain and mash them thoroughly.

  • Dry roast the peanuts until fragrant and lightly browned. Let them cool slightly, then finely grind them into a powder.

  • Once the tapioca pearls are soaked, drain off any excess water. Add the chopped coriander to the soaked tapioca pearls.
  • In a large bowl, combine the soaked tapioca pearls, mashed potatoes, ground peanuts, green chilies, salt, sugar, and lemon juice. Mix everything well to form a firm mixture. This will ensure the vada hold their shape while frying.
  • Heat oil in a deep pan or kadai over medium heat. The oil is ready when a small piece of the mixture sizzles gently.
  • Shape the mixture into small, flat patties or vada. Gently slide them into the hot oil, being careful not to overcrowd the pan.
  • Fry the vada until they turn golden brown and crispy, flipping them halfway through. This ensures even cooking.
  • Remove the crispy vada from the oil and place them on a plate lined with paper towels to absorb excess oil.
