Ingredients
- 1 cup Rice flou
- 1/4 gm Flour
- 1/4 cup Semolina suji
- 2 cup Water
- 1.5 tsp Salt or as per taste
- 1/2 tsp Pizza Seasoning
- 1/2 tsp Chilli Flakes
- 4 tbsp Oil
- 1/2 cup Corn or stuffing for stuffing, sweet
- Cheese cut into cubes - 4 tablespoons
- 1/2 tsp Pizza Seasoning
- 1/2 tsp Chilli Flakes
- 1 tsp Lemon Juice
- Chilli chopped - 1 tablespoon each, green, or coriander coriander and
- 1.5 tsp Salt or as per taste
- Oil for deep frying
Instructions
Prepare the Dough
- Boil 2 cups of water in a pan. Add rice flour, all-purpose flour, semolina, vegetable oil, and salt. Mix well until a smooth batter forms. Remove from heat and cover for 10-15 minutes.
Make the Filling
- In a bowl, combine sweet corn kernels, shredded cheese, pizza seasoning, chili flakes, lemon juice, green chili (if using), and salt. Mix well.
Assemble the Croquettes
- After 15 minutes, remove the dough and knead it into a soft, pliable dough. Take a small portion of the dough and flatten it in your palm. Add about 2 teaspoons of the cheese and corn filling to the center. Fold the dough over the filling and gently seal it, shaping it into a croquette.
Fry the Croquettes
- Heat vegetable oil in a deep pan or wok over medium-high heat. Carefully place the croquettes into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy on all sides, turning occasionally. Remove the croquettes from the oil and place them on a wire rack to drain excess oil.
