Ingredients
 

Vegetables

  • 1/2 cup Bell Peppers julienned, red
  • 1 medium Tomato deseeded and chopped
  • 1/4 cup Spring Onions finely chopped, reserve some for garnish
  • 2 tbsp Coriander also known as cilantro, finely chopped

Potato

  • 1 large Potato peeled and thinly sliced

Prepare the Potatoes

  • Thinly slice the potato and toss gently with salt and chaat masala.

Fry the Potatoes

  • Heat olive oil in a pan over medium-low heat. Add the potato slices and fry until golden brown and crispy, stirring occasionally.

Prepare the Egg Mixture

  • In a bowl, whisk the eggs together. Add the chopped red bell pepper, tomato, spring onions, and coriander. Season with black pepper, salt, and chili flakes. Whisk until frothy.

Cook the Omelette
