Ingredients
Vegetables
- 1/2 cup Bell Peppers julienned, red
- 1 medium Tomato deseeded and chopped
- 1/4 cup Spring Onions finely chopped, reserve some for garnish
- 2 tbsp Coriander also known as cilantro, finely chopped
Potato
- 1 large Potato peeled and thinly sliced
Eggs & Dairy
- 3 Eggs large
- 2 tbsp Cheddar Cheese grated
- 2 tbsp Mozzarella Cheese grated
Spices & Seasoning
- 1/4 tsp Pepper black
- 1/2 tsp Salt or to taste
- 1/4 tsp Chaat Masala
- 1/4 tsp Chili Flakes
Oil
- 1 tbsp Olive Oil
Instructions
Prepare the Potatoes
- Thinly slice the potato and toss gently with salt and chaat masala.
Fry the Potatoes
- Heat olive oil in a pan over medium-low heat. Add the potato slices and fry until golden brown and crispy, stirring occasionally.
Prepare the Egg Mixture
- In a bowl, whisk the eggs together. Add the chopped red bell pepper, tomato, spring onions, and coriander. Season with black pepper, salt, and chili flakes. Whisk until frothy.
Cook the Omelette
