Ingredients
For the Potato Patties
- 3 medium Potatoes
- 2 tbsp Corn Flour plus more for dusting
- 1 tbsp Rice Flour
- 1/4 tsp Ginger grated
- 1/2 tsp Chili finely chopped, green
- 1 tbsp Coriander finely chopped
- 1/4 tsp Chili Powder red
- 1/4 tsp Turmeric Powder
- Salt to taste
- Oil for shallow or deep frying
For the Pea Stuffing
- 1 cup Peas fresh or frozen, green
- 1/4 tsp Chili finely chopped, green
- 1/4 tsp Coriander Powder
- 1 tbsp Coriander finely chopped
- 1/2 tsp Chaat Masala
- 1 tsp Lemon Juice
Instructions
- Boil the potatoes until tender. Peel and grate them into a mixing bowl.
- Add corn flour, rice flour, ginger, green chilies, cilantro, red chili powder, turmeric powder, and salt to the grated potatoes. Mix well.
- For the pea stuffing, lightly crush the green peas using a mortar and pestle or a food processor. You want a coarse texture, not a smooth puree.
- Heat oil in a pan. Sauté the ginger and green chilies until fragrant. Add the crushed peas and cook for a few minutes until slightly softened.
- Stir in the coriander powder, chaat masala, cilantro, salt, and lemon juice. Mix well and remove from heat to cool completely.
- Dust your palms with corn flour. Take a portion of the potato mixture and flatten it into a disc. Place a spoonful of the pea stuffing in the center.
- Carefully bring the edges of the potato disc together to enclose the stuffing, shaping it into a patty. Repeat with the remaining potato mixture and stuffing.
- Heat oil in a skillet for shallow frying or in a deep fryer. Fry the aloo tikki until golden brown and crispy on both sides. This creates a delicious crust and ensures the filling is heated through.
- Serve the pea-stuffed aloo tikki hot with your favorite chutneys, such as mint-coriander chutney or tamarind chutney.
