Ingredients
For the Risotto
- 1 cup Arborio Rice
- 1/2 cup Wine dry, white
- 2 cup Vegetable Broth warmed
- 2 tbsp Olive Oil
- 1 Onion finely chopped
- 1 cup Mushrooms finely chopped
- 3 clove Garlic minced
- 2 tbsp Parsley dried, flakes
- 1/2 tsp Pepper black, or to taste
- 1/2 tsp Salt or to taste
For Filling the Risotto Balls
- 12 ounces Mozzarella Cheese cut into 1/2-inch cubes, fresh
For Breading
- 1/2 cup Breadcrumb or crushed crackers for extra crispiness, panko preferred
- 1/4 tsp Garlic Powder
- 1 tbsp Parsley dried
- 1/2 tsp Oregano dried, flakes
- 1/2 tsp Pepper black, or to taste
- 1/2 tsp Salt or to taste
- 2 cup Vegetable Oil for frying
For the Marinara Sauce
- 1/2 cup Olive Oil extra virgin
- 1 Onion very finely chopped
- 2 clove Garlic finely minced
- 1 stalk Celery finely chopped
- 1 medium Carrot finely chopped
- 1/2 cup Wine dry, red, such as chianti
- 1 28-ounce Canned Tomatoes crushed
- 2 Bay Leaves
- 1/2 tsp Sea Salt
- 1/2 tsp Pepper black, freshly, ground
- 1/2 cup Parmesan Cheese for breading, grated
Instructions
Prepare the Risotto
- Heat vegetable broth in a saucepan over medium-low heat; keep warm. In a medium saucepan, heat olive oil over medium heat. Add onion and garlic; cook until softened, about 3 minutes. Add mushrooms; cook 4 more minutes. Stir in Arborio rice and cook for 1 minute.
- Add white wine; cook, stirring, until absorbed. Add 1 1/2 cups warm broth; stir until absorbed. Add remaining broth; stir until absorbed. Stir in parsley, salt, and pepper. Set aside to cool for 30 minutes.
Prepare the Breading
- In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, parsley, oregano, salt, and pepper.
Shape and Fry the Risotto Bites
- Lightly wet your hands. Shape cooled risotto around a mozzarella cube (about 1/4 cup risotto per ball). Gently roll into a smooth ball. Roll each ball in the breadcrumb mixture to coat evenly.
- Heat vegetable oil in a large skillet over medium-high heat. Carefully add risotto balls and fry until golden brown on all sides, about 5 minutes. Transfer to a paper towel-lined plate to drain excess oil.
Make the Marinara Sauce
- Heat olive oil in a large saucepan over medium heat. Add onion, garlic, and cook until softened, about 10 minutes. Add celery, carrot, salt, and pepper; cook until softened, about 10 minutes. Pour in red wine and cook until reduced by half. Stir in crushed tomatoes and bay leaves. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until thickened. Remove bay leaves and season with additional salt and pepper to taste.
Serve
- Serve the crispy risotto bites immediately with the warm marinara sauce.
