  • Heat 1 tablespoon of oil in a pan. Add mustard seeds and curry leaves. Once they splutter, add sliced onions and sauté until translucent.
  • Add turmeric powder, sambar powder, and green chili. Sauté for a minute.
  • Add the boiled potatoes and mash gently. Mix well with the spices. Add a little water if needed and cook until the water evaporates.
  • Set aside to cool.

Cook the Dosa

  • Heat a lightly oiled non-stick pan or griddle over medium-high heat.
  • Pour 1/4 cup of dosa batter onto the hot pan and spread it thinly in a circular motion to form a crepe.
  • Cook for 2-3 minutes on high heat until the edges begin to lift.
  • Drizzle a little oil around the edges.
  • Flip the dosa and cook for another 1-2 minutes until golden brown and crispy.
  • Repeat with the remaining batter.

Assemble and Serve

  • Spoon the prepared potato masala onto the cooked dosa. Fold the dosa in half or roll it up.
  • Serve hot with your favorite chutney or sambar.
