Ingredients
For the Vada Batter
- 1 cup Chickpea also known as bengal gram, split, split chickpeas
- 1 Onion finely grated, large
- 1/4 cup Coriander finely chopped
- 2 tablespoons Coconut desiccated, dry, grated
- 1-2 Chili Pepper adjust to taste, finely chopped, green
- 1/2 teaspoon Garam Masala
- 1 teaspoon Salt adjust to taste
For Tempering
- 1 tablespoon Vegetable Oil for tempering
- 1 teaspoon Mustard Seed black
- 1 teaspoon Cumin jeera
- 1 pinch Asafoetida hing
- 8-10 Curry Leaf
For Frying
- Vegetable Oil as needed, for deep frying
Instructions
Prepare the Chana Dal
- Wash and soak 1 cup of chana dal in plenty of water for at least 4-5 hours, or overnight.
- Drain the soaked chana dal and grind it to a coarse paste using a little water, about 1-2 tablespoons.
Make the Vada Batter
- In a large bowl, combine the chana dal paste, grated onion, desiccated coconut, chopped green chilies, garam masala, salt, and chopped coriander leaves.
- Mix everything thoroughly until well combined. The batter should be slightly thick.
Prepare the Tempering
- Heat 1 tablespoon of oil in a small pan over medium heat.
- Add the black mustard seeds and cumin seeds. Let them splutter.
- Add a pinch of asafoetida and curry leaves. Sauté for a few seconds until fragrant.
- Remove from heat and immediately add this tempering to the vada batter and mix well.
Shape and Fry the Vada
- Heat about 2-3 inches of oil in a deep pan or kadai for deep frying. The oil should be hot enough (350-375°F or 175-190°C).
- Take small portions of the batter (about 1-2 tablespoons) and shape them into small, flattened patties or vada.
- Carefully drop the vadas into the hot oil, making sure not to overcrowd the pan. Fry in batches.
- Fry the vadas until they turn golden brown and crispy, turning them occasionally to ensure even cooking. This takes about 2-3 minutes per side.
Serve
- Remove the fried vadas with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve the Masala Vada hot with your favorite dipping sauce or as a snack with chai.
