Ingredients
Bread
- 4 slices Bread multigrain
Dry Ingredients
- 2 Tbsp Rice Flour
- 2 Tbsp Gram Flour
- 1/2 tsp Turmeric powder
- 1 tsp Chili Powder red
- 1 tsp Coriander ground
- 1 tsp Cumin ground
- 1 pinch Asafoetida
- 1 1/2 tsp Salt or to taste
Wet Ingredients
- 1/2 cup Yogurt
- 1 tsp Ginger paste
- 1/4 cup Onion chopped
- 1 Tbsp Curry Leaves chopped
For Cooking & Garnishing
- Coconut Oil for shallow frying
- Sesame Seeds for garnishing
Instructions
- In a mixing bowl, combine the rice flour, chickpea flour, turmeric powder, red chili powder, ground coriander, ground cumin, asafoetida, and salt.
- Add the chopped onion, ginger paste, and curry leaves to the dry ingredients. Mix well to combine.
- Add the yogurt to the dry ingredients and whisk until a smooth batter forms. Add a little water if needed to achieve a spreadable consistency. The batter shouldn't be too thick or too thin.
- Spread a thick layer of the batter onto one side of each slice of bread.
- Heat coconut oil in a frying pan over medium heat. Place the bread, batter-side down, in the hot oil.
- Cook for 1-2 minutes, or until golden brown and crispy. Flip the bread and spread the remaining batter on the other side. Cook for another 1-2 minutes until crispy.
- Remove the crispy masala bread from the pan and place it on a plate lined with paper towels to absorb excess oil.
- Garnish with sesame seeds and serve hot with your favorite chutney or sauce.
Recipe Notes
Good To Know
- Coconut oil and curry leaves will give a South Indian flavour.
- For extra crunch, lightly toast the bread slices in a pan with a little coconut oil before adding the masala topping, ensuring both sides develop a crisp, golden texture.
- If you prefer a milder spice level, use deseeded green chilies in place of red chilies, or add a spoonful of plain yogurt to the masala mixture for a cooling effect.
- Transform this dish into a protein-rich meal by topping the prepared Masala Bread with a fried or poached egg, or by sprinkling crumbled paneer or feta cheese before serving.
- To make ahead for busy mornings, prepare the masala mixture in advance and refrigerate it in an airtight container for up to 2 days; simply spread and toast when ready to eat.
Expert Tips
- Experiment with different breads! While white bread is classic, try whole wheat, sourdough, or even a crusty baguette for a unique twist.
- Freshly grated ginger and garlic will enhance the masala's aroma and flavour. Add them directly to the mixture for a more intense taste.
- For a visually appealing presentation, garnish the finished Masala Bread with chopped cilantro, a sprinkle of red chili flakes, or a squeeze of lemon juice.
Storage Instructions
- Masala Bread is best enjoyed fresh. Leftovers can be stored in an airtight container at room temperature for a few hours, but the bread may lose some of its crispness. Reheat gently in a pan or toaster oven before serving.
