Instructions

Prepare the Yeast

  • In a small bowl, combine the sugar, yeast, and warm water. Gently stir and let stand for 10 minutes until foamy.

Make the Dough

  • In a large bowl, whisk together the flour and salt. Make a well in the center and pour in the yeast mixture. Gradually add the water, mixing with a wooden spoon or your hands until a shaggy dough forms.

Knead the Dough

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Add more water, a tablespoon at a time, if the dough is too dry.

First Rise

  • Lightly oil a large bowl. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Shape and Prepare the Lavash

  • Punch down the dough to release the air. Divide the dough into 8-10 equal portions. Roll each portion into a thin circle (about 6-8 inches in diameter). Brush with olive oil, and use a fork to poke small holes over the surface. Sprinkle with sesame seeds.

Bake the Lavash

  • Preheat oven to 450°F (232°C). Place the lavash on a baking sheet lined with parchment paper. Bake for 8-10 minutes, or until golden brown and crispy. Halfway through baking, remove from the oven, cut each lavash into triangles, and bake for another 3-5 minutes, until extra crispy.

Cool and Serve

  • Remove from oven and let cool completely on a wire rack before serving. Enjoy!

Recipe Notes

Expert Tips for Perfect Lavash

  • Use warm water, not hot, to activate the yeast. Hot water can kill the yeast.
  • Don't over-knead the dough. Over-kneading can result in tough lavash.
  • For extra flavor, add herbs like dried oregano or thyme to the dough.
  • If the lavash browns too quickly, reduce oven temperature slightly.
