Ingredients
For the Chicken Cutlets
- 500 gm Chicken mince
- 2 tsp Ginger-Garlic Paste
- 1 tsp Coriander dhania, powder
- 0.5 tsp Cardamom elaichi, powder
- 1 tsp Garam Masala homemade, or store-bought
- 0.5 tsp Pepper black, freshly crushed
- 2 Onion finely minced, medium-sized
- 2 Chili finely minced, green
- 1/2 cup Coriander dhania, finely chopped
- 1 cup Breadcrumb
- 2 Egg Whites
- 1/2 cup All-Purpose Flour maida
- 1.5 tsp Salt or to taste
- 2 tbsp Rice Bran Oil for frying the cutlets
- Oil Vegetable Oil for frying
For the Green Chutney (Optional)
- 1 bunch Mint leaves
- 1 bunch Coriander dhania
- 3 Garlic cloves
- 2 Chili green
- 1 tbsp Lemon Juice
- 1 tbsp Mustard Oil
- 1.5 tsp Salt or to taste
Instructions
Prepare the Chicken Mixture
- Heat rice bran oil in a pan. Add the chicken mince, salt, ginger-garlic paste, and all the spices. Cook until the chicken is browned. Remove from heat and let it cool.
Combine the Ingredients
- Once the chicken mixture has cooled, add the finely minced onions, green chilies, and chopped coriander. Mix well to combine.
Shape and Coat the Cutlets
- Gently shape the chicken mixture into small, flat cutlets. Dip each cutlet in the all-purpose flour, then into the egg whites, and finally coat thoroughly with breadcrumbs.
Fry the Cutlets
- Heat vegetable oil in a pan over medium heat. Carefully place the cutlets in the hot oil and fry until golden brown and crispy on both sides. Remove from pan and drain excess oil.
Make the Green Chutney (Optional)
- Blend together mint leaves, coriander leaves, garlic cloves, green chilies, lemon juice, mustard oil, and salt until smooth. Adjust seasoning to your liking.
Serve
- Serve the crispy chicken cutlets hot, with the green chutney (if made) on the side. Enjoy!
