Instructions

Prepare the Chicken Mixture

  • Heat rice bran oil in a pan. Add the chicken mince, salt, ginger-garlic paste, and all the spices. Cook until the chicken is browned. Remove from heat and let it cool.

Combine the Ingredients

  • Once the chicken mixture has cooled, add the finely minced onions, green chilies, and chopped coriander. Mix well to combine.

Shape and Coat the Cutlets

  • Gently shape the chicken mixture into small, flat cutlets. Dip each cutlet in the all-purpose flour, then into the egg whites, and finally coat thoroughly with breadcrumbs.

Fry the Cutlets

  • Heat vegetable oil in a pan over medium heat. Carefully place the cutlets in the hot oil and fry until golden brown and crispy on both sides. Remove from pan and drain excess oil.

Make the Green Chutney (Optional)

  • Blend together mint leaves, coriander leaves, garlic cloves, green chilies, lemon juice, mustard oil, and salt until smooth. Adjust seasoning to your liking.

Serve

  • Serve the crispy chicken cutlets hot, with the green chutney (if made) on the side. Enjoy!

Recipe Notes

Expert Tips

  • For extra crispy cutlets, ensure the breadcrumbs fully adhere to the chicken mixture.
  • Adjust the amount of green chilies according to your spice preference.
  • Don't overcrowd the pan when frying the cutlets; fry in batches to ensure even browning and crispiness.
  • For a richer flavor, marinate the chicken mince with the spices for at least 30 minutes before cooking.
