Instructions

Prepare the Chicken and Vegetables

  • Finely chop the ridge gourd and set aside. In a separate bowl, gently mix the ground chicken with half the ginger-garlic paste and half the salt.

Sauté Aromatics

  • Heat the oil in a pan or pot over medium heat. Add the chopped onion and sauté until softened and lightly golden brown. Add the remaining ginger-garlic paste and sauté for another minute until fragrant.

Cook the Curry

  • Add the ground chicken to the pan and cook until browned, breaking it up with a spoon. Stir in the turmeric powder and red chili powder. Add the chopped tomato and cook until softened.

Add Ridge Gourd and Simmer

  • Add the chopped ridge gourd, remaining salt and stir well to combine. Cover the pan and simmer for 10-12 minutes, or until the ridge gourd is tender. Stir occasionally to prevent sticking.

Finish and Serve

  • Stir in the garam masala. Taste and adjust seasoning as needed. Serve hot with steamed rice or roti.

Expert Tips for Success

  • For an extra layer of flavor, add a pinch of cumin seeds along with the onions during sautéing.
  • If you prefer a smoother texture, you can lightly pulse the ridge gourd in a food processor before adding it to the curry.
  • Adjust the amount of red chili powder according to your spice preference. For a milder curry, use less.
