Idli Batter & Binding

  • 2 cup Idli Batter leftover; adjust amount as needed for desired number of cutlets
  • 1/2 cup Flattened Rice poha; use thick variety for better binding

Aromatics & Spices

  • 1/2 medium Onion finely chopped
  • 1-2 Chili finely chopped; adjust to taste, green
  • 1 tsp Ginger finely chopped
  • 1/4 cup Coriander dhania, finely chopped, fresh

Seasoning & Other

  • 1-1.5 tsp Salt or to taste
  • 2 cup Oil for deep frying; vegetable or canola oil recommended

Instructions
 

Prepare the Cutlet Batter

  • Mix the poha (flattened rice) into the idli batter. Let it sit for 10-15 minutes to allow the poha to soften and absorb the batter. Add the finely chopped onion, green chilies, ginger, coriander, and salt to the batter. Mix everything thoroughly until well combined.

Shape and Fry the Cutlets

  • Form small, flat patties or cutlets from the batter. Heat the oil in a deep pan or kadai over medium heat. Once the oil is hot, carefully add the cutlets to the pan, ensuring not to overcrowd it.

Cook the Cutlets

  • Fry the cutlets until they are golden brown and crispy on both sides. This will take approximately 2-3 minutes per side, depending on the size of the cutlets and your stovetop's heat. Remove the cutlets from the pan and place them on a wire rack or paper towel to drain excess oil.
