Prepare the Baby Corn

  • Wash the baby corn and cut them in half lengthwise. Sprinkle with 1/2 tsp salt and set aside for 5 minutes.

Make the Coating

  • In a bowl, whisk together 3 tbsp cornflour, 2 tbsp all-purpose flour, and 1 tsp salt.

Coat and Fry

  • Add the baby corn to the flour mixture, ensuring they are evenly coated. Heat vegetable oil in a wok or deep fryer to 350°F (175°C). Carefully add the coated baby corn and deep fry until golden brown and crispy.
  • Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Prepare the Sauce

  • Heat 2 tbsp of oil in a pan or wok over medium heat. Add minced garlic and ginger and sauté for 1-2 minutes until fragrant.
  • Add the chopped spring onions and sauté for another minute.
  • Stir in the green chillies, red chilli sauce, sugar, and black pepper. Mix well.
  • In a small bowl, whisk together 1 tbsp cornflour with 1/2 cup water until smooth. Set aside.

Combine and Finish

  • Add the fried baby corn to the sauce. Stir well to coat.
  • Pour in the vinegar and soy sauce. Add the dissolved cornflour mixture and stir continuously until the sauce thickens.
  • Finally, stir in the honey and sesame seeds. Toss gently for about 1 minute to evenly coat the baby corn.

Serve

  • Serve immediately, garnished with fresh chopped spring onions.
