Ingredients
For the Nachos
- 3 cup Tortilla Chips
- 1 cup Mozzarella Cheese shredded
- 1 medium Tomato chopped
- 1 medium Bell Peppers chopped, green
- 1/2 medium Onion chopped
- 1 tsp Lemon Juice
- 1 tsp Salt or to taste
For the Salsa
- 2 Tomatoes large, ripe
- 1/2 medium Onion finely chopped
- 1 tbsp Olive Oil
- 1/2 tsp Vinegar white
- 3 tsp Lemon Juice
- 1-2 tsp Salt or to taste
- 1 Jalapeno Pepper finely chopped, seeds removed for less heat (optional)
- 1/3 tsp Oregano crushed, dried
- 2 tbsp Coriander finely chopped
Instructions
Prepare the Nacho Topping
- Preheat oven to 400°F (200°C).
- In a medium bowl, combine chopped tomato, green bell pepper, onion, lemon juice, and salt. Mix well.
Assemble the Nachos
- Arrange tortilla chips in a single layer on a baking sheet.
- Spread the tomato mixture evenly over the chips.
- Top with shredded mozzarella cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
Make the Salsa
- Bring a pot of water to a boil. Score an 'X' on the bottom of each tomato and blanch for 1-2 minutes until the skins begin to loosen.
- Remove tomatoes from boiling water and immediately place in an ice bath to stop the cooking process. Peel off the skins and chop the tomatoes.
- In a medium bowl, combine the chopped tomatoes, onion, olive oil, vinegar, lemon juice, salt, jalapeno, oregano, and cilantro. Mix well.
- For a smoother salsa, lightly mash with a fork or potato masher. Let the salsa sit at room temperature for at least 30 minutes to allow the flavors to meld. This step is optional but enhances the flavor significantly.
