Ingredients
Curd Mixture
- 1 cup Hung Yogurt thick
- 1/2 cup Cottage Cheese finely mashed
- 2 Chilies finely chopped, green
- 1/2 cup Coriander finely chopped
Spice Blend
- 1/2 tsp Salt or to taste
- 1/2 tsp Pepper black
- 1 tsp Tandoori Masala
- 1/2 tsp Salt black
- 1/4 tsp Chili Powder red
Instructions
- In a mixing bowl, combine the hung curd, mashed paneer, chopped green chilies, and cilantro.
- Add the salt, black pepper, tandoori masala, kala namak, and red chili powder to the curd mixture. Mix thoroughly to ensure the spices are evenly distributed.
- Heat the oil in a kadai or deep skillet over medium-high heat. While the oil is heating, prepare the bread slices. Trim the crusts from each slice. Lightly dampen each bread slice with water. This helps create a soft, pliable shell for the curd mixture.
- Place a dampened bread slice in your palm. Scoop a spoonful of the spiced curd mixture onto the center of the bread.
- Carefully fold the bread around the curd mixture, forming a sealed "bomb" shape. Gently press the edges to ensure the filling is secure.
- Once the oil is hot, carefully drop a few curd bombs into the kadai, ensuring not to overcrowd. Deep-fry the bombs, turning occasionally, until they are golden brown and crispy. This usually takes about 3-4 minutes.
- Remove the crispy curd bombs from the oil using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
- Serve the Fire Curd Bombs hot with your favorite dipping sauces, such as Thai chili sauce or ketchup.
Recipe Notes
Good To Know
- For extra smokiness, briefly char the shaped bombs over an open flame or use a kitchen blowtorch before frying, intensifying the tandoori flavor profile.
- If you want a melty center, add a small cube of mozzarella or processed cheese to the middle of each bomb before shaping—this creates a gooey surprise inside.
- To make these bombs gluten-free, coat them in a slurry made from rice flour and water, then dust with cornflour or crushed rice flakes before frying for a crisp texture.
- Serve with a cooling dip like mint-yogurt chutney or a sweet mango relish to balance the spicy, tangy notes and elevate the snack’s fusion appeal.
Expert Tips
- For a crispier exterior, double fry the bombs. Fry them once at a lower temperature to cook through, and then again at a higher temperature for a few seconds to achieve ultimate crispiness.
- Don't overcrowd the pan while frying. This will lower the oil temperature and result in soggy bombs. Fry in batches for best results.
- Adjust the spice level to your preference. Add more chili powder for extra heat or reduce it for a milder flavor.
Storage Instructions
- These bombs are best enjoyed fresh. However, leftovers can be stored in an airtight container at room temperature for up to 1 day. Reheat in a preheated oven or air fryer until warmed through and crispy.
