Ingredients
Batter Ingredients
- 2 cup Basmati Rice
- 1 1/2 cup Chickpea split chickpeas
- 1/2 cup Lentil black, split black lentils
- Water as needed
Seasoning and Garnish
- 1/4 tsp Cumin Seeds
- 1 Tbsp Coriander finely chopped, fresh
- Salt to taste

- Oil for frying
Instructions
- Wash the basmati rice, chana dal, and urad dal thoroughly. Soak them in water for 3-4 hours. This soaking process softens the lentils and rice, making them easier to grind.
- Drain the soaked rice and lentils. Grind them into a smooth paste using a blender or food processor, adding water as needed to achieve a thick batter consistency. The batter should be thick enough to coat a spoon.
- Add the cumin seeds, finely chopped fresh coriander, and salt to the batter. Mix well to combine.
- Heat enough oil in a deep skillet or frying pan over medium heat for deep frying. The oil is ready when a small drop of batter sizzles and floats to the top.
- Carefully pour a spoonful of batter into the hot oil. Cook for several minutes until the edges turn golden brown and crispy. Flip the dhuska and cook the other side until it reaches the same golden brown color.
- Remove the cooked dhuska from the oil and place it on a plate lined with paper towels to absorb excess oil.
- Serve the crispy dhuska hot, ideally with a cup of masala chai or your favorite chutney.
