Ingredients
Paneer Mixture
- 200 gm Cottage Cheese (indian cottage cheese, homemade or store-bought)
- 3 Tbsp Corn Flour
- 1 tsp Garlic Powder
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black
- 1 tsp Oregano dried
Vegetable Filling
Other Ingredients
- 100 gm Mozzarella Cheese cut into sticks
- Oil for deep frying
Instructions
- In a bowl, combine the paneer, corn flour, garlic powder, salt, pepper, and oregano.
- Mix well until a smooth dough forms. This will be the base for your croquettes.
- Cover the dough and let it rest for 10 minutes. This allows the corn flour to hydrate and create a more pliable dough.
- In a separate bowl, combine the chopped carrot, bell pepper, onion, parsley, salt, and pepper.
- Mix the vegetables well. This will be the filling for your croquettes.
- Take a portion of the paneer dough and shape it into a long, flat oval.
- Place a portion of the vegetable filling and a mozzarella stick in the center of the oval.
- Fold the dough over the filling to enclose it completely, forming a croquette.
- Repeat this process with the remaining dough and filling.
- Heat the oil in a deep fryer or large pot to 350°F (175°C).
- Carefully drop the croquettes into the hot oil, a few at a time, ensuring not to overcrowd the pot.
- Deep fry the croquettes for 3-4 minutes, turning occasionally, until they are golden brown and crispy.
- Remove the croquettes from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
- Serve the hot, crispy croquettes immediately with your favorite cheesy dip.
Recipe Notes
Good To Know
- For an extra-crispy exterior, double coat the croquettes by dipping them in corn flour slurry and breadcrumbs twice before frying or baking.
- If you prefer a lower-fat option, bake the croquettes at 200°C (390°F) for 20-25 minutes, flipping halfway through, or use an air fryer for a similar crunch with less oil.
- Mix finely chopped spinach, corn kernels, or bell peppers into the filling for added nutrition and color, making each bite even more vibrant and flavorful.
- Serve with a spicy tomato chutney or herbed yogurt dip to complement the cheesy, spicy notes and create a delicious contrast in flavors.
Expert Tips
- For a smoother filling, ensure your potatoes are thoroughly mashed and free of lumps before mixing in the other ingredients.
- Don't overcrowd the pan when frying. Fry in batches to ensure even cooking and a crispy exterior.
- To check for doneness, cut a croquette in half. The center should be hot and the exterior golden brown and crispy.
Storage Instructions
- Store leftover croquettes in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or air fryer until heated through and crispy.
