- 1 cup Chickpea about 150g; soak overnight; also known as dried, red
- 1/2 tsp Turmeric powder
- 1-1.5 tsp Salt to taste
- 2 tsp Lemon Juice freshly squeezed
- 2 tbsp Vegetable Oil for shallow frying and plastic sheet brushing

- Soak 1 cup of dried red chickpeas overnight in plenty of water.
- Boil the soaked chickpeas until tender but still firm (about 1-2 hours, depending on the chickpeas). Avoid overcooking; they should still have a slight bite.
- Drain the chickpeas thoroughly and pat them completely dry with a clean kitchen towel or paper towels. Excess moisture will prevent crisping.
Flattening and Frying
- Place the dried chickpeas between two sheets of lightly oiled plastic wrap (using a non-stick spray is recommended).
- Gently flatten the chickpeas using a rolling pin or a mallet. Aim for a slightly flattened shape, not completely crushed.
