Ingredients
 

For the Fritters

  • 20-25 Carom Leaves vaamu akulu / ajwain leaves; larger leaves are best
  • 1 cup Gram Flour also known as besan or chickpea flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt or to taste
  • 1/2 - 3/4 cup Water add gradually until you reach desired consistency

For Frying

  • 2 cup Oil vegetable oil or any high-heat oil for deep frying

Instructions
 

Prepare the Carom Leaves

  • Wash 20-25 large carom leaves thoroughly and pat them dry.

Make the Batter

  • In a bowl, whisk together 1 cup gram flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
  • Gradually add 1/2 - 3/4 cup water, whisking constantly to create a smooth, thick batter without lumps. The batter should be slightly thicker than pancake batter.

Fry the Fritters

  • Heat 2 cups of oil in a deep pan or wok over medium heat.
  • Dip each carom leaf into the batter, ensuring it's fully coated on both sides.
  • Carefully place the coated leaves into the hot oil, frying in batches to avoid overcrowding.
  • Fry until the fritters are golden brown and crispy on both sides, about 2-3 minutes per side.

Serve

  • Remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil.
  • Serve hot with your favorite chutney or dipping sauce.
