Ingredients
For the Tikki
- 1/2 cup Potatoes mashed
- 7-8 Carom Leaves chopped, fresh
- 1 Tbsp Chilies finely chopped, green
- 1 Tbsp Garam Masala roasted
- Salt to taste
For the Carom Seed Infusion
- 1 tsp Carom Seeds
- Sesame Seed Oil as needed
Instructions
- Boil the potatoes until tender. Drain and mash them thoroughly. Set aside.
- Heat sesame seed oil in a pan over medium heat. Add the chopped green chilies and carom leaves. Sauté for a minute until slightly softened. Season with salt. Remove from heat and set aside.
- In the same pan, heat a little more sesame seed oil. Add the carom seeds and stir for a few seconds until fragrant. This releases their aromatic oils. Add the mashed potatoes, salt, and roasted garam masala. Mix well. Let the mixture cool to room temperature.
- Take a handful of the potato mixture. Create a well in the center and fill it with the sautéed carom leaves and chilies. Shape the mixture into a flat, round tikki.
- Heat sesame seed oil in a pan over medium heat. Shallow fry the tikkis, turning them occasionally, until both sides are golden brown and crispy. Serve hot with your favorite chutney or sauce.
