Ingredients
For the Cajun Spice Mix:
- 1 tbsp Herbs and basil. a pre-made cajun seasoning blend can also be substituted., dried, such as oregano, thyme
- 1/2 tbsp Garlic Powder
- 1/2 tbsp Pepper Flakes red
- 1/4 tbsp Paprika
- 1/4 tsp Pepper black
- 1 tsp Salt
For the Cajun Mayonnaise:
- 1/4 cup Mayonnaise
- 1 tbsp Ketchup tomato ketchup
- 1 Onion finely chopped
- 1/4 tsp Cumin roasted
For the Potatoes:
- 8-10 Potato baby potatoes, parboiled
- 1/2 tbsp Corn Flour
- 3-4 tbsp Vegetable Oil or other cooking oil
- 2 tbsp Coriander chopped, for garnish
Instructions
Prepare the Cajun Spice Mix
- Combine dried herbs, garlic powder, red pepper flakes, paprika, black pepper, and salt in a small bowl. Mix well.
Parboil the Potatoes
- Parboil the baby potatoes until tender but still firm. This usually takes about 10-15 minutes.
Make the Cajun Mayonnaise
- In a separate bowl, combine mayonnaise, ketchup, chopped onion, and roasted cumin powder. Mix well and let it sit for 10-15 minutes to allow the flavors to meld.
Prepare the Potatoes for Frying
- Gently press each parboiled potato to flatten slightly. Do not peel the skin. Dust the potatoes lightly with cornstarch.
Fry the Potatoes
- Heat vegetable oil in a large skillet over medium-high heat. Add 4-5 potatoes at a time, ensuring not to overcrowd the pan. Fry for about 10 minutes, flipping halfway, until golden brown and crispy.
Serve
- Transfer the crispy potatoes to a serving plate. Drizzle generously with the Cajun mayonnaise mixture. Garnish with fresh cilantro and serve immediately.
