Prepare the Barley

  • Soak the barley for at least 4 hours. Then, boil the barley with 1/2 teaspoon of salt, cloves, and cardamom pods until tender. Once cool, discard the cloves and cardamom pods. Rinse the barley and set aside.

Make the Tikki Mixture

  • Boil and chop the green beans and carrots. Grate the boiled potato. In a large bowl, combine the cooked barley, grated potato, chopped beans, chopped carrots, chopped coriander, green chilies, red chili powder, lemon juice, salt, and breadcrumbs. Mix well to form a cohesive dough. Adjust the amount of breadcrumbs as needed to achieve the desired consistency.

Shape and Fry the Tikkis

  • Shape the mixture into small, flat patties (tikkis). Heat oil in a deep pan or kadai over medium-high heat. Carefully place the tikkis in the hot oil and fry until they turn golden brown and crispy on both sides. Remove the tikkis from the oil and place them on a paper towel-lined plate to drain excess oil.
