  • 2 large Russet Potatoes or other starchy potatoes; yukon gold also work well
  • 3 tbsp Olive Oil or other high-heat oil like avocado oil
  • 1 tsp Salt plus more to taste
  • 1/2 tsp Pepper black, freshly ground, more to taste
  • 1/2 tsp Paprika for extra color and flavor, optional
  • 1/4 tsp Garlic Powder optional
  • 1/2 tsp Rock Salt for sprinkling after baking

Instructions
 

Prepare the Potatoes

  • Wash and peel 2 large russet potatoes. Cut into 1/2 inch thick fries. Soak the fries in ice water for at least 30 minutes to remove excess starch. This step is crucial for extra crispy fries!

Preheat and Dry

  • Preheat oven to 400°F (200°C). Remove the fries from the ice water and thoroughly pat them dry with paper towels. Very dry fries are key to achieving crispiness.

Toss and Season

  • In a large bowl, toss the fries with 3 tablespoons of olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder (optional), and 1/2 teaspoon paprika (optional). Make sure the fries are evenly coated.

Bake for Crispiness

  • Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. Keep an eye on your oven - every oven is a little different!
