Frying & Seasoning
- 1 ltr Vegetable Oil or any high-smoke-point oil suitable for deep frying.
- 1.5 tsp Salt sea salt is preferred, adjust to taste.
Instructions
Prepare the Potatoes
- Cut the russet potatoes into even-sized sticks or wedges (about ½ inch thick). Aim for consistent sizes for even cooking.
- Place the potato sticks in a large bowl and cover completely with cold water.
- Let the potatoes soak for at least 30 minutes, or up to 1 hour, to remove excess starch.
Fry the Potatoes
- Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 325°F (165°C). Use a thermometer to monitor the temperature accurately.
- Remove the potatoes from the water and pat them completely dry with paper towels. Excess moisture will cause the oil to splatter.
- Carefully add the potatoes to the hot oil in batches, ensuring not to overcrowd the pot. Overcrowding will lower the oil temperature and result in soggy fries.
- Fry the potatoes for 5-7 minutes, or until they are slightly softened but not browned. Remove them from the oil and set aside on a wire rack or paper towel-lined baking sheet to drain.
- Once the first batch is cooked, increase the oil temperature to 375°F (190°C).
