Ingredients

- 2.5 cup All-Purpose Flour maida
- 1.25 cup Rice Flour
- 0.5 cup Almond Paste
- 2 tbsp Ghee
- 100 ml Milk
For the Sugar Syrup
- 1.5 cup Sugar
- 1 cup Water
- 1 pinch Saffron Strands
- 4 Cardamom Pods elaichi, crushed
For Frying and Garnish
- Vegetable Oil as needed, for deep frying
- 1 tbsp Desiccated Coconut optional, for garnish
Instructions
Prepare the Dough
- Combine all-purpose flour, rice flour, almond paste, and milk in a bowl. Mix well to form a thick, pliable dough. Let the dough rest for 10 minutes.
Make the Sugar Syrup
- In a saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Add saffron strands and crushed cardamom pods. Bring to a simmer and cook until the syrup reaches a one-string consistency (it should coat the back of a spoon).
Shape and Fry the Puris
- Divide the dough into three lemon-sized balls. Roll each ball into a thin circle. Lightly brush with ghee and dust with a little flour. Stack the circles and carefully roll them again into a larger, thinner circle. Cut the large circle into small sections.
- Roll each section into a small, thin puri. Heat vegetable oil in a deep pan or kadai over medium heat.
- Carefully fry the puris until they are golden brown on both sides. Remove the puris and place them on a paper towel-lined plate to drain excess oil.
- Repeat with the remaining dough sections.
Soak and Serve
- Gently add the fried puris to the sugar syrup and let them soak for about 5 minutes. Remove the puris from the syrup and serve warm. Garnish with desiccated coconut, if desired.
