Ingredients
For the Potato Mixture
- 4 Potato diced, medium-sized
- 1 Onion finely chopped, medium
- 2 tbsp Oil
- 1/2 tsp Mustard Seed rai
- 10-12 leaves Curry Leaf finely chopped
- 1/4 tsp Chili Powder red
- 1/4 tsp Turmeric Powder haldi
- 1/2 tsp Lemon Juice
- 1.5 tsp Salt or to taste
For the Batter
- 1/2 cup Gram Flour besan
- 1 tsp Chili Powder red
- 1 tsp Salt or to taste
- 1 tsp Cumin Seed jeera
- 1/4 tsp Asafoetida hing
- 1 pinch Baking Soda
- 1/4 cup Water add more as needed for desired consistency, approximately
- 2 cup Oil for deep frying
Instructions
Prepare the Potatoes
- Pressure cook 4 diced potatoes with 1/4 teaspoon salt and 1/2 cup water for 3 whistles. Let cool, then partially mash.
Sauté the Aromatics
- Heat 2 tablespoons of oil in a pan. Add mustard seeds and let them splutter. Add finely chopped onions and curry leaves, sauté until onions are golden. Stir in red chili powder, turmeric powder, and 1.5 teaspoons of salt. Add the mashed potatoes and mix well.
Add Lemon Juice and Cool
- Stir in lemon juice, mix thoroughly, and remove from heat. Let the potato mixture cool completely.
Make the Batter
- In a bowl, combine gram flour, 1 teaspoon red chili powder, 1 teaspoon salt, 1 teaspoon cumin seeds, 1/4 teaspoon asafoetida, and a pinch of baking soda. Gradually add water to make a thick batter, ensuring it coats the potato mixture well.
Fry the Aloo Tikki
- Heat about 2 cups of oil in a pan. Dip the cooled potato mixture into the batter, forming small patties. Deep fry until golden brown, turning occasionally. Remove, drain on paper towels, and serve hot with ketchup or chutney.
