Ingredients
Potatoes
- 2 medium Potato boiled and grated
Dry Ingredients
- 100 gm Gram Flour besan
- 1/2 tsp Chili Powder red
- 1/4 tsp Turmeric Powder haldi
- 1/4 tsp Pepper black
- 1/4 tsp Mango Powder dry mango powder
- 1 Tbsp Mint Leaves crumbled, dried
- 1 1/2 tsp Salt or to taste
Instructions
- In a large bowl, combine the grated potatoes, gram flour, red chili powder, turmeric powder, black pepper, amchur (dry mango powder), crumbled dried mint leaves, salt, and 1 tablespoon of oil.
- Mix the ingredients thoroughly until a soft, smooth dough forms. Do not add water.
- Cover the dough and let it rest for 30 minutes. This allows the flavors to meld and the dough to become more pliable.
- Heat enough oil in a deep pan or kadai for deep frying. The oil is ready when a small piece of dough sizzles and rises to the surface immediately.
- Attach the bhujiya/sev maker plate to your bhujiya maker. Fill the maker with the potato dough.
- Once the oil is hot, reduce the heat to medium and press the bhujiya maker over the hot oil, releasing strands of dough directly into the oil.
- Deep fry the bhujiya for 2-3 minutes, or until golden brown and crispy, flipping halfway through to ensure even cooking.
- Remove the crispy Aloo Bhujiya from the oil using a slotted spoon and drain on a paper towel-lined plate to remove excess oil.
- Repeat the process until all the dough is used.
- Serve the hot, crispy Aloo Bhujiya immediately with a cup of tea or as a delicious accompaniment to your favorite Indian meal.
