  • Heat the oil in a pan over medium heat. Add the chopped onions and sauté for 3 minutes, until softened and translucent.

  • Add the ginger, green chili, and turmeric powder. Sauté for another minute until fragrant.
  • Stir in the red chili powder and salt. Mix well to combine.
  • Add the boiled potatoes and mash them thoroughly in the pan. Ensure there are no large lumps for a smooth filling.

  • Mix in the chopped coriander leaves. Remove from heat and let the mixture cool completely.
  • Once cooled, shape the potato mixture into lemon-sized balls. Set aside.
  • In a large bowl, combine the besan flour, rice flour, Kashmiri chili powder (or regular chili powder), asafoetida powder, and salt.
  • If using, add the idli/dosa batter for extra fluffy bondas. If not, add a pinch of baking soda to help with leavening.

  • Gradually whisk in water until you achieve a smooth batter with a thick milkshake consistency. The batter should coat the back of a spoon.
  • Heat oil in a deep fryer or large pot over medium-high heat. The oil is ready when a small drop of batter sizzles and floats to the top.

  • Prepare the potato filling a few hours ahead and chill it in the refrigerator to help the flavors meld and make shaping the balls easier.
  • To make gluten-free Aloo Bonda, ensure that the hing (asafoetida) used is gluten-free.

  • For an even crispier exterior, double-fry the Aloo Bonda. Fry them once until lightly golden, then remove and let them rest for a few minutes. Fry them again until golden brown and crispy.
