White Sauce
- 2 Tbsp Corn Flour
- 1 cup Milk lukewarm
- 1 Tbsp Butter
- 1/2 cup Cheese grated
- 3 Tbsp Mayonnaise
- 1 tsp Herbs italian blend recommended, dried
- 1 tsp Oregano dried flakes
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground
Instructions
- Bring a large pot of salted water to a rolling boil. Adding salt to the pasta water seasons the pasta itself.
- Add the pasta to the boiling water and cook according to package directions until al dente. This ensures the pasta has a pleasant chewiness.
- Reserve about 1 cup of pasta water before draining. This starchy water will help create a creamy consistency in the sauce.
- While the pasta cooks, sauté the onions, ginger, garlic, and green chilies in olive oil until softened. This builds a flavorful base for the dish.
- Add the chopped bell peppers and any other desired vegetables. Cook until slightly tender but still crisp.
- In a separate saucepan, melt the butter over medium heat.
- In a small bowl, whisk together the cornstarch and lukewarm milk until smooth. This prevents lumps from forming in the sauce.
- Slowly pour the cornstarch mixture into the melted butter, whisking constantly. Cook for 1-2 minutes, or until the sauce thickens.
- Reduce the heat to low and stir in the cheese, mayonnaise, herbs, oregano, salt, and pepper. Continue stirring until the cheese is melted and the sauce is smooth and creamy.
- If needed, add a little of the reserved pasta water to adjust the sauce consistency to your liking.
- Add the cooked pasta to the pan with the vegetables. Toss gently to combine.
- Pour the white sauce over the pasta and vegetables. Stir gently to coat everything evenly.
