Pasta & Sauce

  • 250 gm Pasta any shape, boiled according to package directions
  • 2 tbsp Curry Paste thai yellow curry paste, readily available in asian grocery stores, yellow
  • 1 cup Coconut Milk
  • 1 tbsp Fish Sauce or soy sauce for a vegetarian option
  • 1 tsp Palm Sugar or brown sugar

Prepare the Sauce

  • Heat vegetable oil in a frying pan or wok over medium heat. Add the yellow curry paste and curry leaves (if using) and sauté for 1-2 minutes, until fragrant. Stir in 1 cup of coconut milk and simmer for 2-3 minutes, allowing the flavors to meld.

Add Vegetables and Season

  • Add the chopped red bell pepper, baby corn, shredded cabbage, and cauliflower florets to the pan. Cook for 5-7 minutes, or until the vegetables are tender-crisp, stirring occasionally.

Finish and Serve

  • Stir in the fish sauce and palm sugar. Taste and adjust seasoning as needed. Add the cooked pasta to the pan and toss to coat evenly in the sauce. Garnish with red pepper flakes (optional) and serve immediately.
