Ingredients
Pasta
- 8 oz Pasta any shape; penne, or farfalle work well. add salt and a drizzle of olive oil to the boiling water for perfectly cooked pasta., rotini
Vegetables
- 1 medium Onion finely chopped
- 1 medium Bell Peppers any color, sliced
- 5 oz Spinach fresh, roughly chopped
- 2 Chilies finely minced (adjust to your spice preference), green
Seasoning & Oil
- 2 tbsp Olive Oil
- 1 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground, or to taste
- 1/2 tsp Oregano dried
- 2 tbsp Lemon Juice
- 1/4 cup Heavy Cream for creamier sauce, optional
Instructions
Prepare the Spinach
- Heat 1 tablespoon of olive oil in a pan. Add the spinach and sauté until wilted. Remove from heat and blend into a smooth puree. Stir in the lemon juice.
Sauté Vegetables
- Heat the remaining olive oil in the same pan. Add the chopped onion and sauté for 1-2 minutes until softened. Add the sliced bell pepper and cook for another 2-3 minutes until slightly tender.
Combine and Simmer
- Add the spinach puree, oregano, black pepper, green chilies, and salt to the pan. Mix well and cook for 1-2 minutes, allowing the flavors to meld. Stir in the heavy cream or milk (if using).
Add Pasta and Serve
- Add the cooked pasta to the pan and toss gently to coat it evenly with the sauce. Cook for another 2-3 minutes to heat through. Serve immediately and enjoy!
