Pasta

  • 8 oz Pasta any shape; penne, or farfalle work well. add salt and a drizzle of olive oil to the boiling water for perfectly cooked pasta., rotini

Vegetables

  • 1 medium Onion finely chopped
  • 1 medium Bell Peppers any color, sliced
  • 5 oz Spinach fresh, roughly chopped
  • 2 Chilies finely minced (adjust to your spice preference), green

Prepare the Spinach

  • Heat 1 tablespoon of olive oil in a pan. Add the spinach and sauté until wilted. Remove from heat and blend into a smooth puree. Stir in the lemon juice.

Sauté Vegetables

  • Heat the remaining olive oil in the same pan. Add the chopped onion and sauté for 1-2 minutes until softened. Add the sliced bell pepper and cook for another 2-3 minutes until slightly tender.

Combine and Simmer

  • Add the spinach puree, oregano, black pepper, green chilies, and salt to the pan. Mix well and cook for 1-2 minutes, allowing the flavors to meld. Stir in the heavy cream or milk (if using).

Add Pasta and Serve

  • Add the cooked pasta to the pan and toss gently to coat it evenly with the sauce. Cook for another 2-3 minutes to heat through. Serve immediately and enjoy!
