Ingredients

- 600 ml Vegetable Stock hot
- 200 ml Milk
- 120 gm Heavy Cream
- 1 gm Saffron Threads soaked in 1 tbsp warm milk

- 250 gm Arborio Rice
- 50 gm Pearl Barley
- 1 ½ tsp Salt or to taste
- Pepper black, freshly, ground, to taste
- 10 gm Oregano dried
- 20 gm Rosemary finely chopped, fresh

- 20 gm Butter
- 2 tbsp Virgin Olive Oil extra
- 60 ml Wine dry, white
- 2 tbsp Parmesan Cheese grated
Instructions
- Warm the vegetable stock in a saucepan and keep it at a low simmer. Stir in the milk. This ensures the risotto cooks evenly.
- In a large, heavy-bottomed pot or Dutch oven, melt 20g of butter with 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the Arborio rice and barley to the pot. Toast the grains for 2-3 minutes, stirring constantly, until they are fragrant and lightly translucent. This toasting step helps the grains release their starches and contributes to the creamy texture of the risotto.
- Pour in the white wine and stir continuously until it is fully absorbed by the rice and barley.
- Begin adding the warm stock mixture, one ladle at a time, to the rice and barley. Stir constantly until each ladleful is absorbed before adding the next. This gradual addition of liquid allows the grains to release their starches slowly, creating a creamy consistency.
- Continue adding the stock and stirring until the rice and barley are cooked through but still retain a slight bite (al dente). This should take about 20-25 minutes.
- While the risotto cooks, prepare the mushrooms. In a separate pan, melt the remaining butter with 1 tablespoon of olive oil. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the sliced mushrooms and sauté until tender and lightly browned.
- Season the mushrooms with dried oregano, freshly ground black pepper, and salt to taste.
- Once the risotto is cooked al dente, stir in the saffron-infused milk, heavy cream, chopped rosemary, and grated Parmesan cheese. Stir gently to combine.
- To serve, spoon the creamy risotto into bowls. Top with the sautéed mushrooms and an extra sprinkle of Parmesan cheese. Serve immediately.
