Prepare the Broth

  • Warm the vegetable broth in a saucepan over low heat and keep it warm throughout the cooking process.

Sauté the Mushrooms

  • Heat 2 tablespoons of olive oil in a large, heavy-bottomed saucepan or Dutch oven over medium-high heat. Add the sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes. Remove the mushrooms and set aside, reserving any liquid released during cooking.

Sauté the Shallots

  • Add the remaining 1 tablespoon of olive oil to the saucepan. Add the diced shallots and cook for 1 minute, until fragrant.

Toast the Rice

  • Add the Arborio rice to the saucepan and stir constantly for 2-3 minutes, until the grains are translucent around the edges and lightly toasted.

Deglaze with Wine

  • Pour in the dry white wine and stir continuously until the wine is almost completely absorbed by the rice.

Add Broth Gradually

  • Add 1/2 cup of the warm broth to the rice, stirring constantly until the liquid is absorbed. Continue adding the broth 1/2 cup at a time, stirring continuously, until the rice is creamy, al dente, and the liquid is absorbed. This will take approximately 18-20 minutes.

Stir in Mushrooms and Finish

  • Remove the saucepan from the heat. Stir in the reserved cooked mushrooms and their liquid, along with the butter and Parmesan cheese. Season with salt and pepper to taste.

Serve

  • Serve immediately and enjoy!
