Ingredients
- 6 cup Vegetables or broth broth
- 3 tbsp Olive Oil
- 1 lb Mushroom thinly sliced
- 2 Shallots diced
- 1 cup Rice arborio
- 1/2 cup Wine dry, white
- 1.5 tsp Salt or as per taste, to taste
- Pepper black, freshly ground, to taste
- 4 tbsp Butter
- 1/3 cup Parmesan Cheese freshly grated
Instructions
Prepare the Broth
- Warm the vegetable broth in a saucepan over low heat and keep it warm throughout the cooking process.
Sauté the Mushrooms
- Heat 2 tablespoons of olive oil in a large, heavy-bottomed saucepan or Dutch oven over medium-high heat. Add the sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes. Remove the mushrooms and set aside, reserving any liquid released during cooking.
Sauté the Shallots
- Add the remaining 1 tablespoon of olive oil to the saucepan. Add the diced shallots and cook for 1 minute, until fragrant.
Toast the Rice
- Add the Arborio rice to the saucepan and stir constantly for 2-3 minutes, until the grains are translucent around the edges and lightly toasted.
Deglaze with Wine
- Pour in the dry white wine and stir continuously until the wine is almost completely absorbed by the rice.
Add Broth Gradually
- Add 1/2 cup of the warm broth to the rice, stirring constantly until the liquid is absorbed. Continue adding the broth 1/2 cup at a time, stirring continuously, until the rice is creamy, al dente, and the liquid is absorbed. This will take approximately 18-20 minutes.
Stir in Mushrooms and Finish
- Remove the saucepan from the heat. Stir in the reserved cooked mushrooms and their liquid, along with the butter and Parmesan cheese. Season with salt and pepper to taste.
Serve
- Serve immediately and enjoy!
Recipe Notes
Expert Tips for the Perfect Risotto
- Use high-quality Arborio rice for the best results. Its starch content is key to achieving a creamy texture.
- Don't rinse the Arborio rice before cooking. The starch on the surface helps create creaminess.
- Stir the risotto frequently while adding the broth to prevent sticking and ensure even cooking.
- Taste and adjust seasoning as needed throughout the cooking process. A little extra salt or pepper might enhance the flavors.
