  • Wash and dry the eggplants. Cut them into 1/2-inch thick slices.

Fry the Eggplant

  • Heat the vegetable oil in a large skillet or pan over medium heat. Add the eggplant slices and fry until lightly browned and slightly softened, about 5-7 minutes per side.
  • Remove the eggplant from the pan and set aside.

Make the Creamy Onion Sauce

  • While the eggplant fries, combine the chopped onions, cashews, and cumin seeds in a blender or food processor. Blend until a smooth paste forms. Add a tablespoon or two of water if needed to help it blend.
