Ingredients
Aromatics
- 1 medium Onion chopped, red
- 2 clove Garlic minced
- 1 Jalapeno Pepper slit lengthwise
Mushrooms & Seasoning
- 12 oz Button Mushrooms finely chopped
- 1/2 tsp Oregano dried
- 1/2 tsp Pepper black, freshly ground, or to taste
- 1.5 tsp Salt or to taste
Liquid & Thickener
- 1 cup Milk whole milk recommended
- 2 tbsp All-Purpose Flour
- 2 tbsp Butter unsalted
- 1 tbsp Vegetable Oil
Garnish
- 2 tbsp Onions finely chopped, for garnish, green
- 4 cup Chicken Broth or vegetable broth for vegetarian option
Instructions
Sauté Aromatics
- Heat the vegetable oil and butter in a large saucepan over medium heat. Add the chopped red onion and minced garlic and sauté for 3-5 minutes, until softened.
Cook Mushrooms
- Add the jalapeno pepper and chopped mushrooms to the pot. Sauté for another 5-7 minutes, until the mushrooms are tender and have released their moisture. Stir in the dried oregano and cook for 30 seconds.
Make the Roux
- Stir in the all-purpose flour and cook for 1-2 minutes, stirring constantly, until lightly browned. This creates a roux which will thicken the soup.
Blend and Simmer
- Remove the pan from the heat and let it cool slightly. Transfer half of the mushroom mixture to a blender and add about 1/2 cup of the chicken broth. Blend until smooth. Return the blended mixture to the saucepan.
Add Remaining Ingredients
- Add the remaining chicken broth (3.5 cups), milk, salt, and pepper to the saucepan. Bring to a simmer over medium heat, stirring frequently, until heated through and the soup has thickened to your desired consistency. If it is too thick add more broth.
Finish and Serve
- Simmer for 5-7 minutes, then taste and adjust seasonings. Garnish with fresh green onions before serving. Enjoy with crusty bread or croutons!
