Ingredients
- 1 cup Basmati Rice
- 1 ltr Milk
- 1/2 cup Sugar
- 1/2 cup Water optional
- 1 tbsp Cardamom Powder elaichi
- handful Nuts almonds or pistachios dry roasted, cashew
- 1 tbsp Custard Powder
- 1/2 Nuts coarsely powdered dry roasted
- 1.5 tsp Salt of, or as per taste
Instructions
Prepare the Rice
- Soak basmati rice in 1/2 cup of water for 1 hour. Drain well and coarsely grind using a food processor or blender.
Make the Custard Base
- In a heavy-bottomed saucepan, heat the milk over medium heat. Gradually whisk in the ground rice, stirring constantly to prevent lumps from forming.
Combine Ingredients
- Once the mixture thickens slightly, stir in the sugar, salt, and custard powder (mixed beforehand with 2 tablespoons of warm milk to create a smooth paste).
Roast and Add Nuts
- Meanwhile, dry roast the mixed nuts in a pan until fragrant. Roughly chop half of the nuts and set aside for garnish. Grind the remaining half coarsely.
Finish the Pudding
- Stir the coarsely ground nuts and cardamom powder into the rice mixture. Cook for a few more minutes, until the pudding reaches a thick, creamy consistency.
