Prepare the Rice

  • Soak basmati rice in 1/2 cup of water for 1 hour. Drain well and coarsely grind using a food processor or blender.

Make the Custard Base

  • In a heavy-bottomed saucepan, heat the milk over medium heat. Gradually whisk in the ground rice, stirring constantly to prevent lumps from forming.

Combine Ingredients

  • Once the mixture thickens slightly, stir in the sugar, salt, and custard powder (mixed beforehand with 2 tablespoons of warm milk to create a smooth paste).

Roast and Add Nuts

  • Meanwhile, dry roast the mixed nuts in a pan until fragrant. Roughly chop half of the nuts and set aside for garnish. Grind the remaining half coarsely.

Finish the Pudding
