Ingredients
Soup Ingredients
- 500 gm Broccoli roughly chopped (florets only)
- 1 Apple and cubed, cored, green, large, peeled
- 30 gm Onion finely chopped, yellow
- 5-6 sprigs Oregano fresh
- 1 Celery Stalk finely chopped
- 1 inch Ginger finely minced, fresh
- 20 ml Olive Oil extra virgin
- 1.5 tsp Salt or to taste
- 0.5 tsp Pepper black, freshly ground, or to taste
- 4 cup Vegetable Broth or water
Instructions
Sauté Aromatics
- Heat olive oil in a pan. Add minced ginger and sauté until fragrant. Add chopped onion and sauté until translucent. Stir in finely chopped celery and fresh oregano; cook for 1 minute.
Cook Broccoli and Apple
- Add broccoli florets and cubed green apple to the pan. Cook for 3-4 minutes, stirring occasionally.
Simmer the Soup
- Pour in vegetable broth (or water), salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until broccoli is tender.
Blend the Soup
