Prepare the Beef

  • Coat the beef cubes in the flour, ensuring each piece is evenly covered.

Brown the Beef

  • Heat vegetable oil in a large Dutch oven or pot over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove the beef and set aside.

Sauté Aromatics

  • Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant.

Add Vegetables

  • Add the carrots, potatoes, and celery to the pot. Cook for a few minutes until slightly softened.

Combine and Simmer

  • Return the browned beef to the pot. Pour in the beef broth and red wine (if using). Add bay leaves, thyme, salt, and pepper. Stir well to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, or until the beef is incredibly tender.

Adjust Seasoning and Serve

  • Taste and adjust seasoning as needed. Remove bay leaves before serving. Serve hot, garnished with fresh parsley (optional).
