Ingredients

- 1/2 cup Coconut Cream Powder
- 1/2 cup Milk
- 1/2 cup Water

- 5 tbsp Sugar
- 1 pinch Citric Acid
- 1/2 tsp Corn Flour
- 1 Lemon for juice and zest
For the Mocktail
- 1/2 cup Coconut Milk from the base recipe above
- 1/2 cup Pineapple Juice chilled
- 1 tbsp Lemon Juice freshly squeezed
- 1/2 tsp Pineapple Extract optional
- 1/4 cup Club Soda for fizz, optional
For Garnishing
- Ice Cubes crushed ice, lime wedge, maraschino cherry, pineapple wedge
- 2 tbsp Sweetened Coconut Flakes for rimming the glass
Instructions
Prepare the Coconut Milk Base
- Combine coconut cream powder, milk, and water in a saucepan. Bring to a simmer over medium heat, stirring constantly until the powder is fully dissolved and the mixture is smooth. Remove from heat and set aside to cool.
Make the Sweetened Base
- In a small saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and stir in citric acid. Return to the heat, and whisk in cornstarch until the mixture thickens and becomes translucent.
Assemble the Mocktail
- In a pitcher, combine the cooled coconut milk base, pineapple juice, lemon juice, and pineapple extract (if using). Strain the mixture through a fine-mesh sieve to ensure a smooth texture. Add the sweetened base and stir gently to combine.
