Ingredients
Potatoes
- 4 Russet Potatoes large
Filling
- 1 cup Bell Peppers chopped
- 1 cup Onion chopped
- 1 tbsp Ginger grated
- 1 tbsp Garlic minced
- 2 Chilies chopped, green
- 50 gm Cottage Cheese crumbled
Toppings & Seasoning
- 2 slices Cheddar Cheese
- 1 tbsp Mayonnaise
- 1 tsp Piri Piri Seasoning
- 1 tsp Oregano dried
- 1 tbsp Olive Oil
- 1/2 tsp Salt or to taste
- 1/4 tsp Pepper black, freshly ground
Instructions
- Preheat your oven to 400°F (200°C). Wash and dry the potatoes. Pierce each potato several times with a fork. This allows steam to escape and prevents them from exploding in the oven.
- Rub the potatoes with olive oil and a generous sprinkle of salt. Place them directly on the oven rack.
- Bake for 60-75 minutes, or until the potatoes are easily pierced with a fork and the skins are crispy. The internal temperature should reach 210°F (99°C).
- While the potatoes are baking, prepare the filling. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté for 5-7 minutes, until softened.
- Add the grated ginger, minced garlic, and chopped green chilies to the skillet. Sauté for another minute until fragrant.
- Stir in the crumbled paneer and cook for 5 minutes, until heated through. Season with salt and pepper to taste.
- Once the potatoes are cooked, let them cool slightly before handling. Cut a cross in the top of each potato and gently fluff the inside with a fork, being careful not to break the skin.
- Spoon the paneer and vegetable mixture into the potato jackets. Top with cheese slices.
- Return the stuffed potatoes to the oven for a few minutes, just until the cheese is melted and bubbly.
