Instructions

Step 1: Prepare for Baking

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish or line it with foil for easy cleanup.

Step 2: Make the Glaze

  • In a small bowl, whisk together the ketchup, packed brown sugar, prepared mustard, and optional Worcestershire sauce until well combined. Set aside.

Step 3: Mix the Meatloaves

  • In a large bowl, combine the lightly beaten egg, milk, shredded cheddar cheese, quick-cooking oats, finely chopped onion, salt, and pepper. Mix them together.
  • Add the ground beef to the bowl. Use your hands to gently mix all the ingredients until just combined. Be careful not to overmix, as this can make the meatloaves tough.

Step 4: Form and Bake

  • Divide the meat mixture into 8 equal portions. Shape each portion into a small, oval loaf and arrange them in the prepared baking dish.
  • Spoon about half of the prepared glaze evenly over the tops of the mini meatloaves.
  • Bake in the preheated oven for 30 minutes. Remove the dish from the oven, spoon the remaining glaze over the loaves, and return to the oven.
  • Bake for an additional 15-20 minutes, or until the meatloaves are cooked through and the internal temperature reaches 160°F (71°C). Let them rest for 5-10 minutes before serving.

Recipe Notes

Expert Tips

  • For extra moisture and flavor, add a tablespoon of finely grated onion or a splash of Worcestershire sauce to the meat mixture before shaping the mini loaves.
  • If you’d like a spicier kick, substitute part of the ketchup with chili sauce or add a pinch of smoked paprika to the mix.
  • To make these mini loaves ahead of time, shape and bake as directed, then freeze on a baking sheet. Once frozen, transfer to a zip-top bag and reheat as needed for quick snacks.
  • These are delicious served with mashed potatoes and green beans for a complete meal.
