Ingredients
For the Mini Meatloaves
- 1 pound Beef ground (450g)
- 1 cup Cheddar Cheese shredded
- 3/4 cup Milk
- 1/2 cup Oats quick-cooking
- 1/2 cup Onion finely chopped
- 1 Egg large, lightly beaten
- 1 tsp Salt
- 1/2 tsp Black Pepper ground
For the Sweet & Tangy Glaze
- 2/3 cup Ketchup
- 1/4 cup Brown Sugar packed
- 1.5 tsp Mustard prepared yellow or Dijon
- 1 tsp Worcestershire Sauce (optional)
Instructions
Step 1: Prepare for Baking
- Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish or line it with foil for easy cleanup.
Step 2: Make the Glaze
- In a small bowl, whisk together the ketchup, packed brown sugar, prepared mustard, and optional Worcestershire sauce until well combined. Set aside.
Step 3: Mix the Meatloaves
- In a large bowl, combine the lightly beaten egg, milk, shredded cheddar cheese, quick-cooking oats, finely chopped onion, salt, and pepper. Mix them together.
- Add the ground beef to the bowl. Use your hands to gently mix all the ingredients until just combined. Be careful not to overmix, as this can make the meatloaves tough.
Step 4: Form and Bake
- Divide the meat mixture into 8 equal portions. Shape each portion into a small, oval loaf and arrange them in the prepared baking dish.
- Spoon about half of the prepared glaze evenly over the tops of the mini meatloaves.
- Bake in the preheated oven for 30 minutes. Remove the dish from the oven, spoon the remaining glaze over the loaves, and return to the oven.
- Bake for an additional 15-20 minutes, or until the meatloaves are cooked through and the internal temperature reaches 160°F (71°C). Let them rest for 5-10 minutes before serving.
