Prepare the Fruit

  • Wash, thoroughly dry, and cut all fruits into desired shapes and sizes. For example, slice strawberries, cut kiwi into rounds, and chop pineapple into bite-sized pieces.

Melt the Chocolate

  • Microwave dark and white chocolate chips separately in microwave-safe bowls for 30-second intervals, stirring well after each interval, until completely melted and smooth. Alternatively, use a double boiler.

Dip the Fruit

  • Dip each fruit piece into either melted dark or white chocolate. Let excess chocolate drip off before placing the fruit onto the parchment paper.

Decorate and Set

  • Immediately after dipping, decorate with silver dragees and/or chocolate vermicelli.

Alternative Dipping Techniques

  • For a two-toned effect, dip the fruit in dark chocolate, let it set, and then dip half of it in white chocolate. You can also create a zigzag pattern with white chocolate on top of set dark chocolate.
