Ingredients
For the Chicken Marinade:
For the Biryani:
- 0.5 cup Oil vegetable or any neutral oil
- 4 Onion medium-sized, sliced
- 6 Chili green, slitted
- 4 Cardamom green cardamom pods
- 4 clove Cloves
- 1 inch Cinnamon stick
- 9 Peppercorn black peppercorns
- 1 tbsp Ginger Paste
- 1 tbsp Garlic Paste
- 1 tbsp Chili Powder adjust to taste, red
- 1 tsp Turmeric Powder also known as haldi
- 1 tbsp Coriander Powder also known as dhania
- 2 tbsp Coriander also known as dhania, chopped finely
- 9 leaves Mint Leaves chopped
- 2 Tomatoes finely chopped, medium-sized
- 1 Lemon juice of
- 1 tsp Saffron Strands soaked in 2 tbsp milk (optional)
- 1 kg Basmati Rice good quality, rinsed
- 500 ml Water
Instructions
Marinate the Chicken and Potatoes
- Beat the yogurt with 0.5 cup of water and 1 tsp salt. Wash the chicken and potatoes (don't peel potatoes). Marinate chicken and potatoes in the yogurt mixture for at least 2 hours.
Prepare the Fried Onions
- Soak the basmati rice in water for at least 30 minutes. Heat half the oil in a heavy-bottomed pan. Fry half the sliced onions until golden brown. Remove and set aside.
Sauté the Aromatics
- In the same pan, add the remaining oil and sauté the remaining sliced onions until translucent. Add green chilies, cloves, cinnamon, cardamom, and peppercorns. Sauté for 2 minutes.
Cook the Chicken
- Remove the marinated chicken and potatoes from the curd mixture. Add to the pan and fry for 10 minutes. Reserve the remaining marinade.
Add Spices and Tomatoes
- Add ginger-garlic paste and sauté for 2 minutes. Add salt, turmeric powder, red chili powder, and coriander powder. Sauté for 5 minutes.
Simmer and Add Rice
- Add the chopped tomatoes and coriander leaves. Cover and simmer for 10 minutes. Stir in the reserved yogurt marinade, 500ml water, rice, and mint leaves. Simmer for 10 minutes with the lid on.
Dum and Serve
- Add the fried onions, lemon juice, and saffron milk (if using). Cover and cook on very low heat for 15 minutes (dum). Add more water if needed. Garnish with fried onions and serve hot with raita.
