About Boondi Raita

Boondi Raita is a classic Indian side dish cherished across India and its neighboring countries. This refreshing accompaniment features creamy yogurt (or Indian curd) as its base, delivering a cool, tangy flavor and smooth texture that beautifully balances spicy main courses.
While raitas come in many varieties—often including onions, tomatoes, cucumber, or even fruits—Boondi Raita stands out with the delightful addition of crisp, fried boondi pearls. Seasoned with salt, black salt, and roasted cumin, it’s a quick, flavorful way to elevate any lunch spread with both taste and tradition.

Recipe Notes

For soft boondi, refrigerate the raita for 15 to 20 minutes and then serve.
you can soak the boondi in enough water for 15 minutes, drain it and squeeze out the excess water and add it to the curds.

Additional Tips

  • For extra crunch, reserve a handful of boondi to sprinkle on top just before serving, while mixing the rest into the yogurt so you get both soft and crisp textures in each bite.
  • If you prefer a lighter raita, briefly soak the boondi in warm water for 2-3 minutes, then squeeze out the water before adding to the yogurt—this helps reduce excess oil and makes the boondi softer.
  • To give your raita a unique twist, add a pinch of chaat masala or finely chopped fresh mint and coriander; this amps up the refreshing qualities and adds a burst of flavor.
  • Leftover raita can thicken as it sits; whisk in a tablespoon of chilled milk or water just before serving to restore its creamy consistency.
