Bitter gourd maintain blood sugar level. It is good for skin, hair, eyes, liver function and helps in weight loss. Bitter gourd recipe is always in my daily menu. Usually I make simple karela recipe. As it is bitter young generation used to avoid karela. Here I am sharing achari karela recipe which is full of taste as it is loved by all generation.

Ingredients
- 500 gm Karela (bitter gourd)
- 25 gm Jagerry
- 25 gm Coriander Seeds (roasted)
- 20 gm Red Chillies (roasted)
- 10 gm Cumin Seeds (roasted)
- 10 gm Fennel Seeds (roasted)
- 10 gm Fenugreek Seeds
- 10 gm Onion Seeds
- 10 gm Turmeric Powder
- 10 gm Dry Mango Powder (dried)
- 5 gm Asafoetida
- 50 gm Mustard Oil
- 1-2 tsp Salt (or as per taste)

Instructions
- Wash the karela and cut them in ring shape. Steam the Karela slices then spread on a cotton cloth. Dehydrate keeping in shadow.
- Roughly ground the whole spices coriander seeds, cumin seeds, fennel seeds, Fenugreek seeds and red chilli except onion seeds.
- Take a mixing bowl add the grounded spices, onion seeds turmeric powder and salt.
- Heat oil then switch off the flame drop asafoetida then cool down add jaggery. Mix all ingredients thoroughly then add the dehydrated karela slices. Mix with gentle touch. Every one hour do it twice or thrice. Then keep in a glass container.
